Usage Chop the Vivani couverture chocolate into pieces and place in a saucepan. Heat slowly in a double boiler until the chocolate has melted and reached a thick, fluid consistency. Don't overheat the chocolate and don't let it come into contact with the water. Let it cool and then heat again briefly. The couverture is now ready for use.
