Fenugreek (Trigonella foenum-graecum) is a plant in the legume family (Leguminosae). The plant is also known as foenugreek or "Greek hay". The plant is used as a kitchen herb. It originated in Mesopotamia and was already known in the Mediterranean region in antiquity.

Nutritional value

One tablespoon of whole seeds – an amount you typically wouldn't eat all at once – contains 35 calories and several nutrients: Fiber: 3 grams. Protein: 3 grams. Carbohydrates: 6 grams.



Use
Fenugreek seeds are used in pickled vegetables, chutneys, curry mixes, and curry pastes. Briefly roasting them removes the bitter taste. Soaked seeds are delicious in a salad. You can also sprout fenugreek, just like bean sprouts, on a damp dish in the dark.
