1. Traditional shadow technique
Our SunMatcha® Kokyu is grown using the traditional Japanese shade technique, a refined form of shade cultivation practiced in Japan for generations. This method involves carefully covering the tea trees with cloth or mats for 30 days, filtering up to 90% of the sunlight. This controlled shade technique encourages the plant to produce additional polyphenols, antioxidants that naturally protect the plant from UV rays.
In addition, the shading technique stimulates chlorophyll production, which gives the leaves their deep green color and a smooth, full flavor. Thanks to this traditional approach, SunMatcha® Kokyu not only boasts a rich profile of bioactive compounds but also the characteristic quality and refinement you expect from true Japanese matcha.
2. Hand-picked during the first and second harvest
For SunMatcha® Kokyu, we use only leaves hand-picked during the first (Ichibancha) and second (Nibancha) harvests. During these periods, the quality of the leaves is at its peak: full of flavor, vibrantly colored, and rich in bioactive compounds.
3. Gently steam to preserve flavor
Immediately after harvesting, the leaves are briefly steamed. This preserves their bright green color and characteristic aroma while preventing oxidation.
4. Dry slowly and carefully
The leaves are slowly dried with hot air in four 40-minute sessions. This process, which takes over three hours, creates a stable, dry base without losing any nutritional value.
5. Freeze storage for maximum freshness
To maintain quality, the dried leaves are stored at low temperatures—from 5°C to as low as -18°C. This optimally preserves the aromas, texture, and composition until the milling process begins.
6. Removing stems and veins
Before grinding, the stems and veins are carefully removed. Only the tender, green part of the leaf is used – this ensures a silky texture and a subtle, creamy flavor.
7. Traditionally ground with stone mills
Finally, the leaves are slowly ground using medium-sized stone mills. This traditional method prevents burning and oxidation, so the powder retains its freshness, color, and nutrient content.
