Slices of Takuan daikon radish pickled
Takuan is a typical Japanese pickled vegetable. Although Japan produces a wide variety of fermented vegetables, takuan is considered the traditional staple food par excellence and is the most commonly eaten.
The daikon radish is harvested in winter on Honshu, Japan's largest island. It is washed in clear spring water and then dried. It is then pickled in large wooden barrels for a year in saltwater and rice bran. This preserves the full nutritional value of the fresh root and amylase, a starch-converting enzyme. Cooking daikon loses some of its nutritional value. Therefore, pickling is a valuable preparation method for reaping its full nutritional benefits.

Usage
You can serve takuan cut into small pieces straight from the package as a side dish with meals, or use it in salads and vegetable dishes. It can also be cooked with rice, cut into small pieces.
