Dried lotus slices
Lotus is an annual tuber. Like other root vegetables such as carrots, burdock, onions, and white radishes, it's widely used in macrobiotic cooking.

The lotus plant grows in water. In summer, its leaves spread out in different directions, providing shade. The unique, beautiful, fragrant flower, 15-25 cm in diameter, unfolds at the surface.

The historical origins of the lotus plant go back to India. Along with Buddhism, the plant was brought to China and from there, 600 years ago, by a famous monk, to Japan.

The effect of soaked and then boiled lotus root is stronger than that of powder and can be useful as a vegetable at the end of winter.
