Kohren lotus root powder Kohren is a fine powder of ground dried lotus root. It is used to make lotus candies, among other things, which can also be used as bonbons. The plant's rhizomes, which grow along the ground, are used to make tea. The main components of these rhizomes include asparagine, nelumbine, and starch.
Lotus rhizomes are harvested in winter, when their nutrient content is highest. To make kohren, these rhizomes are crushed and chopped. The fragments are then sieved out to remove the fibers and ground into a fine powder.
