Our experienced Japanese producer makes this soy sauce from soybeans, koji (fermentation starter), shochu (rice-based sake distillate), and sea salt. The ultimate goal is to balance the sauce's flavors so that all five flavors are present. This happens during the fermentation period, which lasts nine months. This is a superb yet affordable gluten-free sauce that will elevate any Asian or European dish.
