These wafer-thin slices of pickled ginger are used as a side dish with sushi, together with wasabi and soy sauce. Japanese people eat sushi ginger between sushi bites because ginger neutralises flavours. This ensures that every piece of sushi is enjoyed to its full potential. Sushi ginger is also delicious with a salad, on a sandwich, or with a (vegetarian) hamburger. We use first-class organic ginger from the paradise of Fiji: islands with some of the cleanest soil in the world.
