Genmai miso is made from organic soybeans and unpolished brown rice. It is traditionally produced by true Japanese specialists. In this process, genmai miso ferments for no less than 12 months in large, 100-year-old cedarwood barrels. This gives the miso a deep, authentic, and incomparable taste. Genmai miso is ideal as a base for (miso) soups, sauces, and marinades, and a convenient seasoning for stir-fries and stews. Genmai miso has a medium-strong flavor.
