Almond paste is made purely and solely from lightly roasted, organic almonds. By roasting and grinding the skin along with the almond, the almond paste gets a particularly delicious, distinct flavor. In addition, all the good nutrients from the skin remain in the paste. Almond paste is great for baking or making smoothies, but it's also very tasty on a (sprouted) sandwich or cracker.
