It annually produces a sugary sap. This is tapped in Canada every spring and slowly boiled down into syrup. This way you end up with a delicious, plant-based alternative to honey or an unrefined substitute for sugar.

The difference between amber rich taste (grade A) and dark robust taste (grade C)? Grade C is darker brown and has a more intense, caramel-like maple flavor. Liquid "gold"!
