Lemon balm was one of the 16 magic herbs of Albertus Magnus (Albert, Count of Bolstadt, 1193-1280).
The booklet "Liber aggregationis," with a Dutch translation "Dat Boeck der Secreten Alberti Magni" is believed by some to have been written by him, and it lists these 16 plants.
Carmelite monks have been producing their 'Melissa Spirit', an alcoholic drink based on Melissa, since the early 17th century.
