Pu-erh tea is made from the Camellia sinensis tea plant and originates from the Chinese province of Yunnan. Camellia sinensis is the same tea plant from which green tea is made. The main difference between green tea and pu-erh tea is the fermentation process.
What makes pu-erh tea so special is its fermentation process. After harvesting, the tea is aged for a long time in high humidity. This differs from green tea, which is only dried after the tea leaves are picked. Aging in high humidity ensures that there is enough moisture and enzymes for fermentation. During fermentation, molds and bacteria convert substances in a product, changing its smell, taste or appearance.
The unique fermentation process gives the tea its dark red color and characteristic taste. Pu-erh tea is known for its full, rich and earthy notes. Fermentation can take months to years. The older the tea, the milder the taste.
