Usage Preparation: To be used mixed with wheat flour to increase the protein content or to make seitan, which can then be prepared as schnitzel, minced, or diced. To prepare seitan: Combine the gluten with water, form a ball, and lower it into a large volume of boiling salted water with spices. Cook for 1 hour. This ball will double, perhaps even triple, in size. Gluten is the protein in wheat grains.
