Fenugreek seeds (Trigonella foenum-graecum) originated in ancient Mesopotamia and were used centuries ago in countries such as China and India.

Instructions for use
1. Place one to two tablespoons of seeds in a preserving jar and add plenty of lukewarm/warm water. [Any glass jar is suitable, provided it is large enough (min. 1½ litres) and the neck does not narrow (too much).]2. Secure a plastic or fibreglass mosquito screen onto the jar using a strong (postman's) elastic band. Preferably do not use aluminium mosquito screens as these are sometimes treated against insects.3. After the indicated soaking time¹, drain the water, rinse the seeds, and drain the water again.4. Place the jar at room temperature, tilted upside down, in a colander, rack, or tray so that excess water can drain away. [It is important that all water can drain away; the water clinging to the sprouts is sufficient to keep the sprouting process going. It is also important that the seeds/sprouts do not cover the entire screen. For a good result, sufficient air circulation is crucial. Therefore, after each rinse, spread the seeds/sprouts along the length of the jar.]Do not place the jar with seeds/sprouts on the radiator or in direct sunlight!5. Rinse the seeds/sprouts about 3 times a day during the indicated cultivation period², and then always place the jar tilted upside down.6. After the very last rinse*, leave the sprouts in the jar (tilted upside down) at room temperature for at least 18 hours to dry before consuming them and/or placing them in the refrigerator.* If desired, the last rinse can be replaced by a 'washing process' to remove the hulls from the sprouts:-Fill a basin or similar to the brim with lukewarm/warm water.-Put the sprouts in and 'wash' them loose.-Skim off the hulls by 'waving' them over the edge of the basin.-Scoop the sprouts out of the water by hand and return them to the jar.-Reattach the screen, place the jar tilted upside down, and allow to dry at room temperature for at least 18 hours.Store leftover sprouts chilled (max. 7°C) and sealed (not airtight).¹ Soaking time: ± 6 hours* Cultivation period: ± 4 days
