Unroasted nuts are raw nuts. Raw nuts still contain their naturally occurring nutrients. These nutrients disappear once the nut is treated, or roasted. Roasting nuts is essentially frying them in oil. Frying adds fats to the nut and removes nutrients that cannot withstand heat.
