Spain is known for its high-quality extra virgin olive oil, thanks to the ideal conditions for olive growing: vast mountainous areas, warm long summers and mild winters.
Olive varieties
Mattisson organic olive oil is made from a blend of different olive varieties: Picual, Picudo, Hojiblanca and Arbequina.
This combination ensures consistent quality and a balanced taste.
Production process
The pressing process is carried out entirely mechanically at low temperatures, so that the nutrients and flavours from the olive are retained.
No chemical processes or additives are used.
Characteristics & Flavor Profile
An important characteristic of high-quality extra virgin olive oil is its low acidity: this oil has an acidity of a maximum of 0.8%.
In terms of taste, there is a nice balance between fruity, bitter, sharp and sweet.
Nutritional Value & Health Benefits
Organic extra virgin olive oil consists mainly of the monounsaturated fatty acid omega 9 and in smaller amounts of omega 3 and 6.
Omega 9 (oleic acid) contributes to healthy cholesterol levels.
Because omega 9 is relatively stable, the oil oxidizes less quickly when heated to 170°C, but cold use is preferred to optimally preserve all nutrients.
