The difference between guar gum and guar bean fiber lies primarily in how they are processed and used, although both come from the guar plant (Cyamopsis tetragonoloba). Guar gum is made by grinding the endosperm (the inner part) of the guar bean into a fine powder. It contains primarily galactomannan, a soluble polysaccharide. Guar bean fiber is made from the entire guar bean (including the husk and other parts), retaining primarily the natural fiber. Therefore, the fiber content is significantly higher than that of guar gum. Another difference is that it dissolves completely in water, unlike guar gum, which forms a jelly-like substance.
