Miso is a paste of fermented soy, which has been used in the Far East for 1300 years to flavor dishes, but also for its high-quality protein content. Shiro Miso is a white, very young miso with a typical mild, sweet and salty taste. This is due to the combination of soy and rice and the short natural fermentation of barely 7 days.
