Isot pepper Isot pepper is a spice used in Turkish cuisine. It is less spicy than many other chili peppers and is primarily used in Turkey in meat and savory dishes.
The stems of fully ripe fruits of plants belonging to the Capsicum genus (Solanaceae) are cut off according to the technique. It is obtained by storing it at room temperature for 3-12 days and adding vegetable oil and table salt. It is a semi-fermented spice with a distinctive taste, smell, aroma, and various colors, from red to black.
