Lavender water has many nuances of fragrance because this water (or hydrosol) contains many other constituents than lavender oil. It is, in fact, the second product of distillation. Lavender water, as well as other hydrosols, contain very few oil-soluble molecules that are present in an essential oil. For example, lavender oil contains many esters that are responsible for its scent. Lavender water lacks this component, so it smells less like lavender. This wonderful water tones, cools, and strengthens the skin.
