Bamboo salt coarse, roasted 9 times
Making bamboo salt requires a great deal of experience and patience. Sea salt is placed in tubes made of 3-year-old bamboo and sealed with red mountain clay. The salt is then heated, ground, heated, and ground up to nine times over a period of 8–15 hours over a hot pine fire. The sulfur-rich bamboo carbonizes, and the salt absorbs some of the sap and minerals from the bamboo and the red clay.
